When the weather gets hot, it's time to bring out the grill and have a BBQ! There is nothing as delicious as a well grilled burger or hotdog on a hot summer day. Except, what makes a perfect grilled food? Food Theorists, I pose this question: Do you grill with charcoal or propane? Is there a difference in taste or quality grilling depending on which you use? That is what I aim to find out today! I take my food very seriously and I won't stop until we all know the RIGHT way to grill!

MatPat, people prefer different types of taste because of genetics, my grandmother and her sister find an herb (of course I don't remember as I write my comment) to have a metallic taste, it's all down to genetics

Why didn’t you try pellet grills! You get the same flavor from charcoal but get the ease of use from a gas grill. Ahem! (get a Traeger grill) 😁

Good clickbait. You're going deeper and deeper into what I call "KGglobal shithole" with these videos. You used to be good. The video doesn't tell you anything that I didn't already know and there was a slight inconsinstency in something you said at the end but eh, maybe that's just me. Also the research is incomplete and the video was wrapped up too quickly. I'll just find a way to hide your videos from my feed from now on. It's not the first "Food Theory" video that has left a uh, forgive me the pun, "bad taste in my mouth".

Here is the problem with the system used here... I know Far too late for my input, but I just found Food theory a day or 2 ago, and I live in Texas, we do Grilling. Now the categories you present are mostly correct but they are weighted incorrectly, as their weight is mostly subjective, not objective. Remember that point in the second category where you bring up the the ease of lighting a Propane grill, versus the "going back in time" of lighting a Charcoal one, well, when you return to the first category and ask WHY people grill so little, you did not present that the data separated the study into the 2 types of grill, so if you consider that grilling could become to feel like a chore if there is a 20 minute prep time versus turn a nob and let it preheat itself, that could be one subcategory negatively effecting the total skew of the data. I am not going to sit here and just shill for Propane though, and I will say this, you missed the other extremely common grilled food, Steak, especially when it comes to personal family grilling and not family cookout grilling. If it is just you, your wife and your kids (Cat pat included), not only do you need limit yourself to the general cookout burgers and hotdogs, but the Adults could share a couble of steaks while junior has some burgers and ketchup. Now Why did I add Steak, it adds a 4th category, so wouldn't that threaten bringing taste to a tie. No. Here is what become obvious when you add the extra category the flavor adding possible of pure Charcoal become more apparent when using Porous meats. The reason Hotdogs out perform on the gas to the Charcoal, is the Skin casing, and thus a more even heat distribution lends itself to a higher quality of dog. Where as Beef, and vegie Burgers, along with Steak and Chicken find themselves having added flavor from the smoke that comes off of the charcoals, which clean burning propane can not supply. Now Either can add more, and better distinct smokiness, in the why you presented, by adding moistened woodchips of certain types, either to the coals or above the heat, before letting the meat cook under your grills lid. But in a head to head, if you are looking for smoky flavor without buying woodchips on the side, and you don't find the set up to cook on your grill to be a chore, then Charcoal is your choice. But if you one to keep an even heat, one to heat up the grill as you desire, and not have to worry about overly long cooking sessions (as coals do begin to lose their heat over time), but you don't really feel a need to ADD flavor to your meat or meat substitute, then go Propane. But you see that is the WHOLE reason there is not 1 type of grill that dominates the market. My family is quiet large, 9 people in our house alone. We have both types of Grill. We use our Propane grill 30 - 60 times a years, and have had the same propane grill for 5 years. We use it mostly for Family meals, like Chicken, Burgers, Hotdogs, and Strip steaks, that we wont done in a relatively short time and at about the same time. You see grilling gives us a larger area to cook all of our protean at 1 time. But on special occasions, or just with a little planning ahead we pull out the Charcoal BBQ for Burgers, or more importantly Brisket which takes HOURS of cooking which you brought up as not part of your test, but as a specific we want to infuse smoky flavor into the meat. We only ever cook hot dogs on the Charcoal grill if we got it out for something else, we only use it for hamburgers if we actively planned for it ahead of time. This is the conundrum there is no 1 better grill. It is not actually objectively quantifiable, as so much of it is left to subjectivity and situation of those using it. Sure if it is for a cook out the 20 min start up for charcoal isn't a problem, but if you are trying to just get something in your kids mouth at the end of a long day, the gas gives you a relatively pain free option.

Why bother grilling in the first place? Taste. Real wood wins. Chemical junk in bag charcoal makes it lesser to wood and propane. If you have a cheap or free source of quality wood, go with wood, otherwise use propane.

Charcoal all the way. My favorite experiment was about a year ago when there was a sale I bought a leg of lamb and cooked it on the grill. Browned it over the coals, then moved it over to the opposite side and let it cook. Used a meat thermometer and pulled it when it came to temp (medium rare for me). Had a nice mild smoked flavor from the coals.
